This take on the traditional Black Forest Cake is a big winner for fans of chocolate and, to mix it up, bourbon!

Bourbon Black Forest Cake with Sweetgrass Granola
About 20 dark sweet cherries, halved and pitted
¼ cups sugar
2 Tbsp Kentucky Bourbon
2 cups Germantown Chocolate Sweetgrass Granola
3 Tbsp butter, melted for crust
2 sticks butter for batter
16 oz semi-sweet or dark chocolate
8 eggs, cold
2 cups heavy whipping cream
1-2 Tbsp sorghum

Preheat oven to 325° F. Halve and pit cherries. Mix with sugar and Bourbon and set aside to macerate.
Grease a 9 or 10 inch springform pan. (if you line the pan with parchment paper for easier removal, make sure to grease it as well.) Wrap the edges with several layers of foil to make it waterproof during the water bath.
Pound or blend (on pulse) 2 cups of the Germantown Chocolate Sweetgrass Granola until chunky. Mix in a bowl with 2 Tbsp melted butter until mixture presses firmly into bowl. Press into the greased pan.
Whip 8 cold eggs with a hand or stand mixer until they double in volume. Set aside. Melt the chocolate and 2 sticks of butter carefully, stirring frequently. Slowly fold the eggs into the chocolate until incorporated. Pour into the pan and smooth out. Press the cherries skin side down into the top of the cake.
Carefully place springform into a roasting pan and fill until halfway up the side with boiling water. Place in the middle of the oven and bake for 20-30 minutes. It will not feel completely set up in the middle. Cool on a rack until room temperature, then cover and chill in the fridge. Whip the cream with sorghum to taste. Slice cake and top with cream before serving.
